Boosting breakfast at Henderson

As the spring semester begins to wind down, staff at Henderson Dining Hall aim to improve student dining experience as breakfast attendance numbers declined.  

Recently, staff members noticed a decrease in the number of students coming to the dining hall during early breakfast hours.  

Dining services attribute the low numbers to the spring sport season, as many athletes now have much busier schedules. Henderson employee Rachelle Harmon points out the recent change in attendance.  

“Sport teams are not practicing like they were at the beginning of the semester,” said Harmon. “They are actually in season now and traveling more.”  

Despite low student attendance during early breakfast hours, dining staff work to bring back favorite menu items. The dining hall now serves a variety of breakfast sandwiches on Mondays, Wednesdays, and Fridays. At the top of their list are double eggs instead of the single eggs previously served. 

“We have brought back the double eggs,” said Harmon. “It’s not an everyday thing, however, it’s still a little sporadic.”  

Double eggs were taken away due to the recent spike in bird flu cases. As egg prices across the country continue to rise due to the outbreak, it has been difficult for dining services to cover the cost of so many eggs. To keep within budget, the dining hall resorted to only serving single eggs during the past few weeks.  

“We went down to one egg because of the bird flu and the high prices,” Harmon said. “There just weren’t as many eggs.” 

Despite the recent challenges with serving eggs at breakfast, the staff at Henderson is looking forward to boosting the dining services and experiences for students. They want to bring back some beloved items while also adding some festive items for the upcoming holiday.  

“There will be Easter candy here the last day before Easter break,” said Harmon.
